Lamb Chops with Olive, Shallot, and Thyme Vinaigrette

Instructions

  1. Whisk together the oil and lemon juice. Mix in the shallot, garlic, tomatoes, olives, thyme, and capers. Season to taste.
  2. Season the chops, sear each side in a hot pan with oil, then roast at 425 until done.
  3. Plate the chops, dress, and serve.
