Lamb Chops with Olive, Shallot, and Thyme Vinaigrette
serves 4
Ingredients
- 8 ea lamb chops
- olive oil
- 2 T lemon juice
- 1 ea shallot, chopped fine
- 1 cl garlic, chopped fine
- 1/2 C cherry tomato, halved
- 1/2 C kalamata olives, halved
- 1 T thyme, chopped
- 2 T capers
Instructions
- Whisk together the oil and lemon juice. Mix in the shallot, garlic, tomatoes, olives, thyme, and capers. Season to taste.
- Season the chops, sear each side in a hot pan with oil, then roast at 425 until done.
- Plate the chops, dress, and serve.
